Baked Oatmeal Squares

Ingredients

  • 2.5 Cups regular rolled oats (I use quick) divided
  • 3 Tbsp Chia seeds
  • 1/2 Cup + 1 Tbsp ground flax
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1.5 cups milk (any type will work)
  • 1/2 cups maple syrup (I used half honey and half maple syrup)
  • 2 Tbsp nut butter
  • 1 banana chopped small
  • 1 Tbsp pure vanilla extract
  • dried fruit or nuts of choice

Method

  1. Heat oven to 350oF and line an 8 inch square pan (I used one round 8 inch) with parchment
  2. In a food processor add 1 Cup of oats and process until a flour forms
  3. In one large bowl add all dry ingredients and mix.  In a smaller bowl add the wet ingredients including the banana and whisk until the nut butter has disolved.  Add the wet ingredients to the dry ingredients and mix until combined.  Fold in the nuts or fruit of choice.
  4. Pour the batter into the pan and bake for about 40 min or untile the edge is golden.  Cool for 10 min and remove to a cooling rack before slicing.
  5. ENJOY!

These freeze very well (BONUS!)
