Friday Recipe!

Happy Friday!!!  Is everyone looking forward to the weekend?  I feel like the weeks are just rolling right along at a steady pace these days.  As Goldie Locks would say “not too fast, not too slow, juuuuuuust right”.  I have a day in the life post ready in the works but since my day (Thursday) isn’t over yet it will have to wait until next week.  In the mean time I wanted to share my granola recipe that I have been meaning to share for a long time.  And I figure if I post it today you will have all weekend to whip up a batch and let me know what you thought of it 😀

Home Made Granola (adapted from Whitewater Cooks at home)

Preheat oven to 325oF

In a large bowl combine the following:

  • 2.5 Cups large flake oats
  • 1/2 Cups chopped almonds
  • (any other nuts that you would like to add for a total of 1 Cup)
  • 1/2 Tbs cinnamon
  • 1/2 Tbs ground ginger
  • 1/2 tsp salt

Once the above ingredients are well combined add the following to the dry ingredients above:

  • 1/2 Cup apple sauce
  • 1/8 Cup honey
  • 1/8 Cup maple syrup
  • optional 1/4 Cup of brown sugar if you prefer a sweeter taste
  • 1 Tbs olive oil

Combine everything well and place on a baking sheet (no Parchment or grease needed).  Place in the oven and bake for about an hour stirring a few times.  Keep an eye on it because baking times really very.  It will be done when it turns a golden brown.  This recipe is great to double as well.

Take out and cool before adding 1Cup of dried fruit of your choosing.

Store in an air tight container for a week or in the fridge for a month.

WIAW 15/01/2014 With a Little Extra Thrown In

How is the week half way through already!?  I feel like I just woke up and it was Monday.  I know I love weekends but I don’t really enjoy when the weekdays go by in a blur.  In an interesting note today I have had the opportunity to take up horse back riding lessons again.  I used to ride and compete back in Jr. High through to University but had to give it up as it became a huge financial commitment.  I think that if I start again, I will make sure that it’s very casual (in formality that is) at least starting out.  To be honest I have missed it like crazy so hopefully I can be back up in the saddle again 🙂

Well seeing as it is Wednesday there should be a little focus on the eats of Wednesday Tuesday.  Thanks Jenn at Peas and Crayons and all who participate for making WIAW such a success!

Breakfast

Before I left for work I did snack on a handful of cereal as I put my actual breakfast together that I eat at work.  That breakfast was coffee followed by a yogurt, fruit, and cereal bowl.  I only had half the banana in the bowl so I saved the other half for a little way into the morning.  It was very satisfying and kept me full until it was snack time.

Seeing as this WIAW involves fitness as well as food I will include my workout.  Around lunch time I headed to the gym to hit up the treadmill for a 10km run.  I just have to mention again how awesome the ipad mini is and how amazing Netflix is.  It made the run fly by!  But I really can’t wait to get outside running again.

By the time I got back to the office I was more than ready for…

Lunchphoto 2It sorta fell apart but in the wrap is leftover salmon from Monday nights dinner along with some cheese, veggies and mustard.  On the side were some veggies, hummus, and some Food Should Taste Good Chips (love ’em).

That kept me going for most of the afternoon aside from half a granola bar that I had but didn’t really like, hence only eating half.  It was a Fibre One bar I found in the office kitchen but it tasted kind of chemically and artificial.

After a packed train ride home and a really busy work day I was able to get a little creative in the kitchen and whipped up a chicken Masala from a recipe I had found in my Quinoa Revolution Cookbook —> highly recommend this book for nutritious and quick dinners.

Good morning! Good morning da da da da dum dum 😀  Just a little musical introduction for you to start your day.  How was your Monday?  Sorry about the late post yesterday, I was having some technical difficulties but I think I have them ironed out now.

mmmmmm yay more snow…. and it was my favorite type, the un-forecasted HA.  It really makes me jealous of coworkers is Hawaii!  The winds were just a whipping last night but died down while John and I commuted to work and it was actually quite nice and almost warm.  Fast forward an hour and you have the above picture (I stole it from social media).  All of a sudden the windows were rattling and it sounded like little pellets were hitting the window.  I think my whole office let out a collected sigh of frustration.  Oh well, it made the morning extra cozy in the office 🙂

At lunch I decided to brave the outdoors to get to the gym were got a little cardio done and most of a NTC workout in.  I am not sure if it’s the cold or what but the sweat was just pouring off my face (TMI?) YECH but I guess in a good way.

I just need to reiterate how wonderful last nights dinner was and that if you like shrimp and spicy food you should make this!

MIMM 12/01/2014

Well happy Monday everyone! Are you ready for another week? My weekend was pretty good but not fantastic as I am still getting over my ridiculous cold 😦 I decided to migrate from my throat to my nose plus a cough. The cough made things interesting on Sunday when we went to buy some fish. When it came to our turn to get what we wanted I started having a coughing attack and couldn’t even get out what I wanted to buy! Bah those are so annoying and only a cough drop helps, which I luckily had in my purse. Does anyone else get those attacks at the end of a cold? The rest of Sunday was spent napping, reading, and catching up on some tv. Unfortunately my for yo date had to be cancelled on account of my sickness 😦

But enough on the downer parts of the weekend and move onto what’s marvellous in my Monday (thanks Katie for hosting).MiMM

marvellous is…. Slow cooker Sunday!

I used this recipe from the foodnetwork and it turned out absolutely great plus it made a lunch for both of us today!photo

marvellous is…. Attending a good friends baby shower!
She is due in February and expecting a boy! It was so fun to watch her unwrap so many adorable little things for a baby boy! So e people had some really good ideas! And I found out that the second cousin of a friend I went to the shower with, invented the diaper genie! Haha how cold is that!? I don’t have much contact with babies but I know how much parents rave about those things!

marvellous is… The iPad mini john got me for Christmas! It had been so much fun and was a really amazing gift!

And finally marvellous is…. Having my parents over for homemade pizza dinner! As usual we had such a great night but neglected to take photos. And john did most of the cooking and everything was great!

Thinking Out Loud Thursday 19/12/2013

Well, welcome to another Thursday!  This mean only one more morning of waking up to the alarm clock blaring!  I hope everyone’s day is off to a good start.  I know mine is as I survived the freezing commute to work and am now sipping on another Starbucks.  I figure it’s the last week so I deserve it 🙂  Plus I had a gift card that was burning a hole in my pocket phone.  But let’s get down to business.  Last Thursday Amanda started Thinking Out Loud Thursday’s and I really enjoyed it last week so I thought I would give it another go!

Thinking-Out-Loud

1) I am really looking forward to Christmas, like it’s getting bad.  And it’s not all because I get a bit of a brain break.  I think it’s more to do with having the immediate family all together.  It’s only going to be my parents, John, and my bro in town.  My brother moved to Vancouver at the end of the summer and has also been doing some traveling around Panama and Columbia so I am really looking forward to having him around.  However I will definitely miss having my grandparents, aunts, uncles, and cousins around.

2) Has anyone seen this? http://www.calgaryherald.com/Record+breaking+lottery+winner+plans+honour+late+wife+with+donations/9292166/story.html I think everyone was absolutely amazed at the generosity of this man.  It gave me such a happy feeling to read this earlier in the week and I know everyone was talking about it the last few days around these parts.  I mean so many people say they would give a large sum to charity but this man actually acted on it and gave it ALL away!

3) I am thinking of switching gyms this coming year.  My friend has me pretty much convinced to join Goodlife which is where I had been taking a few Body Attack classes.  There is a Goodlife right beside my gym that I use close to work and another one kind of close to my house.  We will see….

4) So last week or the week before someone asked the question, at the end of their blog, if you like snickerdoodles?  I had to admit that I never tried them so I decided to remedy the situation last night.  Enter my first batch/taste of homemade snickerdoodle…

The verdict is….they are Ok.  I heard the collective gasp coming from many of you!  Please don’t be mad!  I feel like I should really like them I mean butter, sugar, and cinnamon… but there is a certain tang that I can’t get over.  I think it’s the cream of tarter.  I will eat the batch and see if my tune changes.  I know I need to make Amanda’s chewy white chocolate cranberry cookies very soon!

5) I bought this deodorant a while ago and love it!

photo 1It is from the Rocky Mountain Soap Company and doesn’t have any strange chemicals in it (i.e. aluminum oxide) and it really works!

6) I feel like I have mastered the messy bun this week… I just can’t get the gumption up to actually do anything to my hair.

7) I don’t think any of my nights are complete without a bowl of cereal before bed anymore.

8) I promise to put up my granola recipe.  But you might have to remind me.

9) I am looking forward to my WIAW next week because it will be done on Christmas Day!!  AHHHHHHHHHHHH how fun!  I might not post it until Thursday.

10) I really need to get my hair cut.  Maybe that is why I just don’t feel like doing my hair.

HAPPY 30TH BIRTHDAY HUSBAND!!!!

Yup It’s the big 3-0 for him and I must say, better him than me 😀  The birthday plans for him include going for a pre dinner drink and then head UNA Pizza for some munch!  This is now a tradition that we have on his birthday.  The pizza at UNA is outstanding and I will give you look into the restaurant tomorrow… ooooo a perfect WIAW!

How was everyone’s Monday?  What did you get up to?  My day started out with a BIKE RIDE into work!  Oh how I had missed those the past week.  Since the temperatures were a little warmer we decided not to let a little snow stop us.  It was so great and the traffic was so bad after work yesterday we really felt we made the right decision.  Although, the ride home was a bit of a slog with the bike wanting to go every which way in little snow drifts.  We are definitely going to break out the bikes again today!

What else happened yesterday….

Well a little lunch time workout was squeezed in and another day crossed off the calendar until Christmas break!

John made a lovely Mahi Mahi for dinner with salad and the best potatoes I have had in a long time!  But I forgot to take a picture 😦

I made my granola bars again which you can find on my recipe page.

We finally have Netflix and so have decided to watch Breaking Bad.  And so far it’s so good!  Although I did have to hide my face for some of the gory bits last night.

And before I go I need to leave you with this (West Jet is one of Canada’s airlines 🙂 )

Our Furniture Came and WIAW Dec 4 (From Dec 1)

WOOOOOO Hump Day!!  The week is half over already (I can’t believe it really) and another weekend approaches.  I hope everyone has had a good first few days of the week.  I know min have been really good and really busy!  And yesterday afternoon was especially great as our new dining room table was delivered!

Love it!  And we did get 6 chairs with it although only a few are pictured.  And as an added bonus, the delivery guys were at our house before I got there!  Early delivery… Say What!?  We can’t wait to have people over for dinner and host them properly!

Well now I guess we should get started on WIAW (from Sunday) with a shout out to Jenn for hosting!wiaw fall into good habits button

mmmm that was good!  Half a whole wheat bagel with peanut butter, omelette stuffed withed sautéed mushroom spinach onion and pepper, an apple, and a few grapes.  Coffee X2 were thoroughly enjoyed!

After breakfast I started putting our dinner together, Slow Cooker pulled pork from Skinnytaste!  I also made her homemade BBQ Sauce

After that was taken care of John and I headed out for a 13km run as I have posted about before.photo (2)

photo 3A green smoothy!  The first drink to be made with our Vitamix, and I think it was the best smoothy EVER!  In the mix a handful of spinach, a cup of frozen tropical fruit medley and a couple a frozen strawberries, 1 frozen banana, a big scoop of Greek Yogurt, and a splash of milk to move it around.  That tasted so good after a long run!  But I also needed something more…photo 4

I polished off the other half of my bagel from breakfast topped with Ricotta cheese and some dehydrated tomatoes my friend brought over.  Those tomatoes are like crack!  John and I have been eating them like chips!

After lunch we did our furniture shopping I mentioned earlier in the week.  By the time we came home it was time to finish off making dinner.

Slow Cooker Pulled Pork with homemade BBQ sauce!  On the side was a coleslaw I made with a vinegar dressing and a side of mashed carrot and parsnip.  Salad was also had with this dinner as I felt it needed a little green.  This kept me full most of the evening but I did leave room for a cup or so of grapes while watching the Walking Dead!
