Friday Recipe!

Happy Friday!!!  Is everyone looking forward to the weekend?  I feel like the weeks are just rolling right along at a steady pace these days.  As Goldie Locks would say “not too fast, not too slow, juuuuuuust right”.  I have a day in the life post ready in the works but since my day (Thursday) isn’t over yet it will have to wait until next week.  In the mean time I wanted to share my granola recipe that I have been meaning to share for a long time.  And I figure if I post it today you will have all weekend to whip up a batch and let me know what you thought of it 😀

Home Made Granola (adapted from Whitewater Cooks at home)

Preheat oven to 325oF

In a large bowl combine the following:

  • 2.5 Cups large flake oats
  • 1/2 Cups chopped almonds
  • (any other nuts that you would like to add for a total of 1 Cup)
  • 1/2 Tbs cinnamon
  • 1/2 Tbs ground ginger
  • 1/2 tsp salt

Once the above ingredients are well combined add the following to the dry ingredients above:

  • 1/2 Cup apple sauce
  • 1/8 Cup honey
  • 1/8 Cup maple syrup
  • optional 1/4 Cup of brown sugar if you prefer a sweeter taste
  • 1 Tbs olive oil

Combine everything well and place on a baking sheet (no Parchment or grease needed).  Place in the oven and bake for about an hour stirring a few times.  Keep an eye on it because baking times really very.  It will be done when it turns a golden brown.  This recipe is great to double as well.

Take out and cool before adding 1Cup of dried fruit of your choosing.

Store in an air tight container for a week or in the fridge for a month.

A day in the life

Wow guys!  I loved reading all of you breakfast ideas and comments on my post yesterday.  Thanks for all of you breakfast thoughts, I might try all of them in the next few work days.  So how was everyone’s Friday eve?  I know mine was busy busy busy but I did try to snap a few photos through out my day so I could bring you my first day in the life post!  Prepare to be astounded and amazed 😉 But seriously I managed to take a bunch of photos so I am proud of that 😀

6 am (the ugh hour)

photo 1Yup it’s dark 😦 shouldn’t I still be sleeping!? If you look really close you can see my pillow.  I am not a snooze button person so I am out of bed pretty quick after this.   I think it’s like ripping off a bandaid

First some moisturizer.  I love the “It’s Potent” by benefit and Clarins HydraQuench.  It really makes my skin feel moisturized all day and the “It’s potent” make all my dark circles go away 😀photo 3

The makeup comes next with a little bit of finger creeping in.

Today’s outfit features a thermal long sleeve, lulu lemon tights, ski socks, and regular socks.  Don’t worry I change when I get to work.  After this I usually head down and grab a nibble and publish my post I wrote the night before.  Usually I get a chance to glance at the news as well.

After a quick change, check email, and get started on the work day I scrounge up some breakfast and COFFEE!  photo 4photo 5

11 am (snack attack!)photo 1 photo 2I feed my coffee addiction once again and munch a banana.  I then decided that wasn’t enough and needed a granola bar (home made).

12:10pm (I go to the gym… I work out)

The old leg is still sore so I jumped on the elliptical while watching Netflix for 40min followed by a few weights.  No picture because I always get self conscious.

1:30pm (Hangry!!!!!!!)photo 3oops…. uhhhh on the plate was a wrap stuffed with black bean chilli and cheese with veggies and a few Food Should Taste Good chips.  This was pretty awesome but I went back for a square of chocolate and a handful of caramel corn.  Our work kitchen is a very dangerous place.

5pm (I’m freeeeeeeeeeee 😉 actually I don’t mind work!)

Hopped on the bike to pedal home into the sunset!  WOOOOOO it was so pretty!

John headed off to Yoga, so I was on my own for dinner.  I decided to go with an omelette (only half shown), toast with PB and fig jam, carrots, celery, and humus.  A little random but very delicious.  I am not going to lie, I have been grazing since dinner.

7pm (A sad time)

I headed off to the Library to pick up my copy of the Hunger Games only to find the library closes at 5pm on Thursday.  5pm?  really? @#$% oh well I also had to make a stop for groceries so it’s not all a waist.  For a bonus strawberries were on sale!

Time to shower off the days grime and give the hair a good wash followed by folding some clothes that had been sitting in the dryer for a few days

Itchy Throat Giveaway and HAPPY FRIDAY!

I have a fresh batch of cookies for anyone who wants to trade throats for a day or two (people who are also sick need not apply)!  What!?  No takers?  Come on…. all I want in a non itchy throat for mine that is driving me up the wall!  Yes I know I posted  the other day that my cold wasn’t that bad but I guess I jinxed it 😦  I woke up on Thursday morning with a really plugged nose and a throat that feels like I have swallowed glass :(:( I think it’s just being caused by some post nasal drip (TMI?) but bahhhhhhhhhh GO AWAY!  How was that for a blog post introduction?

On a nicer note I received some lovely flowers from my coworkers after they found out my Grandma passed away over the Christmas holidays.

It was so thoughtful of them.  The flowers are so cheerful and beautiful and remind my of my grandma who will forever be in my heart.

Well I have finally officially changed my last name 😀  I will be receiving my new health care card and drivers licence in the mail in a couple of weeks.  Oh and if anyone else is in the process of changing their last name, the ask for your new signature at the registry office.  That really caught me off guard and I had to come up with my new signature on the spot, needless to say it is not very creative.  Oh well life goes on.  I also managed to pick up some face cream, that I had run out of many moons ago, cough medicine for above mentioned throat, and toothpaste.  YAY for a very productive lunch hour but not a very interesting post.  Sorry my day was not very interesting by any means but…. tomorrow is another day (and it’s Friday as I am writing this Thursday night)!

I really hope I am able to rally a little health wise for the weekend because it is shaping up into a nice busy one. Saturday is a baby shower, Sunday= FRO YO :D, and John and I hope to watch the hobbit one night.

Made it!

And then there was….one

ONE DAY LEFT!!!  We made it! It’s here!  The last day before two weeks off!  John and I already have some plans for the first couple of days including a pub night tonight, dinner with friends tomorrow night, and Christmas shopping.  I have a feeling these days are going to go by fast!

Well Happy Friday to everyone!  I should likely save this for Monday but it made me laugh so I thought I would share it today…

Alright, how about a little bit of a life recap…

Yesterday went by pretty uneventfully and started off a little like this photo 2A recycled picture from earlier in the week but you get the idea.  I think I may have started a bad habit 😉  My breakfast soon followed and was another bowl of overnight oats.  Don’t get me wrong I really like them but man am I craving eggs, waffles, pancakes, French toast… just anything different and special!  Oh just writing this reminded me that I need some Egg Nogg.  It would go so well with most of those breakfast items…. and with some rum and a fire in the evenings!  WOW that was quite the tangent haha.

A lunch time run was then followed by a salmon salad sandwich and copious other bits and pieces such as veggies, crackers, humus, apple, trail mix, chocolate (some pictured and some not)…

After work I had to make some returns to the mall downtown.  This has to be the least busy mall in Calgary during off hours (weekends and after work) just don’t go near it between 11 a.m.-1:30 p.m.  It is absolutely manic during those times.

I came home to a wonderful pasta dinner and salad that John had cooked up when I walked in.  I think pasta has to be up there on some of my favorite foods along with bread.  So basically last night’s dinner couldn’t be much better as I mopped up the last of my sauce with a piece of bread…. oh perfection.  I spent the rest of the night whipping up a double batch of gingerbread dough…. hmmm I wonder what that is going to be used for 😉  Although I did have a half fail.  As I started my second round of dough I saw the brown sugar sitting on the counter.  Funny, I didn’t put any of that into the first batch…. uh oh…. hahaha we’ll see how it turns out.  I might be making a third batch.  After the dough prep adventures I was more than ready to crash in front of the TV and watch the Modern Family Christmas special…. oh I laughed more than a few times!

You know what this means??????  It means 1 more week of work until the Christmas Holidays begin!  To say I am a little excited would be a bit of an understatement!  It’s really starting getting busy around these parts.  John’s Christmas party is tonight and that always proves to be a good time!  I have a cookies baking/swap date with a couple of amazing friends!  But I am not going to lie, this is starting to stress me out (ya life is tough).  I can’t for the life of me decide what I want to make.  I was thinking cookies but now I am thinking of a candy or a bar or some sort….DARN YOU PINTEREST!!!!  I figure I will know the right one when I see it!  But if you have any ideas let me know pretty please!  Below are a few that have caught my eye…

Sunday might be a lay low kind of day or my mom is going to come over for some wine/martini time and then Tuesday is my companies Christmas lunch.  And I really need to squeeze in some Christmas shopping to boot.

The last couple of days I have been a bottomless pit when it comes to food.  I am going to put it down to tons of goodies in the office more activity and colder days.  Speaking of activity John and I have met up a couple of times after work together to ride home and I have beat him up the hill both times!  MWAHAHHAHA.

Last night when I went down to the parking garage to get my bike to go home there was actually another bike down there!  And I judging by the helmet I think it was another lady high 5!

And I wasn’t going to let a really cold make me miss my target of a full week of riding into work.  Below is how I looked coming into work this morning.  YA I hardcore… or dumb 😛 I think I still have some goggle face lines.

Another Cold One and That Girl Needs Therapy

Hhahaha Love this!  I also love being able to wear jeans on Friday’s especially today!  I think if it’s below -20 all dress code should go out the window and bring on the comfy cozies! Forecast for today partly cloudy with a 60% chance of dying of exposure.  -25 for a high today with a windchill of -40 mmmmmmm nice…….

Sorry for the blurriness.  I think it’s because if I can’t really see it, it isn’t real.

Well yesterday I decided to take a trip to the physiotherapist.  I hadn’t mentioned anything about injuries on here but I was having some pain in the glute and IT band areas which I was putting down to running.  It turns out that I have really really really tight adductor muscles that is pulling everything out of alignment.  My right foot is actually twisting outwards because of it and I really can’t find good balance on that leg.  The plan for now is to stretch and foam roll and then go back for another visit for some intense massaging and needling.  Needing sounds terrifying but it sounds more like giving the muscle a good poke.  Has anyone else had needling done?

Well the therapist didn’t mention anything about not running so I think I shall continue with that 😉  And the running really hasn’t been bothering it too much since I went for my massage last friday.  I hope to be able to get some running or something in today at lunch.

I just want to give a BIG HAPPY BIRTHDAY to one of my lovely friends!  Her birthday was actually yesterday (well today because I am writing this post Thursday night)!  I can’t wait to celebrate with you today!!!???????????????????????????????????????

Active Thursday and Weekend Plans

HAPPY FRIDAY EVERYONE!  I hope everyone’s day is off to a great start.  I know mine is as I am currently sipping on a hot coffee and chowing down on some apple pie overnight oats 🙂

Yesterday was a pretty full day that started off with another yogurt bowl breakfast that was the same as the other days but…. for this batch I decided to add cinnamon to the dry shredded wheat, genius!    photo 1

I also got in a short lunch time workout that consisted of one of the arm burners from the NTC App.  Lets just say that I am feeling some pain today.  I also got in a yoga session after work which felt great after lifting so many heavy boxes on the weekend (Thanks Ning!).

I ended the day with a nice cup of hot tea and a bed time snack of cereal and milk and a little modern family.  Man that show cracks me up!photo 3photo 2

So what does everyone have planned for the weekend?  Are you taking it easy, are you going to be busy, or are you a little of both?  I know in our house it will be a little of both.  The weekend will start relaxing as I have a message on the books this afternoon followed by a lovely glass of red wine with my name on it!  And then there is more unpacking to be done, more things to be bought, and friends to see.  I also have some meal plans that I want to execute that may involve a slow cooker and pork!  Oh and it has been almost a full week of riding the bike into work and I am physically exhausted.  I can not wait for some R n R this weekend.

Oh and I just want to say how amazing it is to be able to ride my bike into the sunrise in the morning and into the sunset in the evening, all along a winding river….
